Moke: The Traditional Beverage from Flores
Moke is a traditional beverage from Flores, made from the fruits of palm trees. Also known as arak, sopi and dewe, it is a symbol of friendship and hospitality for the locals.
How Moke is Made
Moke is produced by fermenting palmyra and sugar palm fruits, a technique passed down through generations. It is distilled in clay pots in people’s yards. Collecting one bottle of moke takes around 5 hours, as the liquid is slowly gathered drop by drop using bamboo tools. The best quality moke, known as bakar menyala, is considered beneficial for health.
Varieties of Moke
White Moke
This variety is made by extracting juice from palm fruits using hollow bamboo sticks. The juice, which is whitish in color, is called white moke. It can be fermented in jars or cooked into a reddish sugar called Gula merah.
Black Moke
Black moke is an alcoholic beverage made by fermenting white moke in clay vessels called kuwu tua. It is often served at traditional parties and ceremonies.
