Thirty minutes above the harbour, another Flores begins
Your clients come to Labuan Bajo for the dragons and the diving. The island itself — its
tribes, its fire kitchens, its mountain gardens — stays invisible from a boat. Dapur Tara
is where they meet it: a wood-fired kitchen in the hills of Kampung Melo, overlooking the sea
they sailed that morning.
What Dapur Tara is
More than a restaurant — a gastronomic experience
Dapur Tara was created by Kaka Liz — founder, cultural guardian, and the
soul of every fire at the table. She spent years travelling Flores, learning food, language and
healing traditions directly from its tribes. There is no à la carte and there are no
walk-ins: the fire is lit at dawn, the smoked chicken cooks for eight hours, and everything is
prepared for the guests who booked — and only for them.
When your clients sit down, the whole Manggarai feast — around eight dishes — is set on
the table at once, and each one is introduced by name: what it is, where it grows, why it matters
in Flores. It is the indigenous cuisine of the Manggarai highlands, cooked the way it was long
before restaurants existed — something no kitchen in Labuan Bajo can put on a plate.

The trade offer
One table. Closed for your group.
The Private Fire Table
The whole sanctuary closed for one party — lunch or dinner. The full fire-cooked Manggarai
feast and a Flores moke (arak) tasting for adults. A guided walk through the permaculture garden is available on request.
From an intimate table of six to a group of forty.
One published price, two ways to sell. Guests pay the same IDR 660,000 wherever they book, so your
client never finds it cheaper elsewhere. Sell it standalone at the published price, or build it into a package at your
own selling price — either way you pay us the agent net rate of IDR 590,000 (your ~10% commission is already deducted, with
nothing to claim back after the visit).
- Add the fire kitchen — your group cooks the feast with the team before eating it: IDR 935,000 published · IDR 840,000 agent net per guest.
- Series & allotments (15+ guests), and 2027 departures — terms by agreement; we build a rate around your volume.
Minimum billing 6. The whole place closes for your group, so a party of two is
welcome — billed as six (6 × IDR 590,000 = IDR 3,540,000 agent net).
Children under 10 at 50%; from 10 years, full price. Halal; vegetarian (tofu & tempe) menu on request.
Rates are for the experience only — transport is quoted separately.

How a booking works
For your operations
A private evening, hour by hour
A private dinner, from the moment your clients arrive with us. Lunch runs on exactly the same rhythm, from 13:00. Transport is not included, so you set the pick-up around these times.
With the fire kitchen
If your group cooks the feast, the day runs 10:00–14:00 — mornings only.
On request — a guided walk through the permaculture garden, the plants and herbs of the meal to come. No fixed slot — it runs before the meal, and arrival simply moves 20–30 minutes earlier.
